Overnight Oats

It’s the weekend. I’m sick and on mandatory overtime for work. It’s also freezing outside so a warm and filling breakfast sounds like just the thing.

I searched Pinterest for some non-egg options (my preschooler is currently in a no egg phase) And found overnight oats or oatmeal muffins/baked oatmeal but they were cold or needed a lot of work in the morning. I needed warm and ready the minute I woke up.  Then I came across a pin that had an overnight crock pot oatmeal but the link led nowhere. So I decided to try to recreate the recipe from the bits of direction left in the comments and came out with something delicious!

Crock Pot Overnight Oats

  • 2-3 apples, cubed
  • 1/3 c brown sugar
  • 1tsp cinnamon
  • 2 cups steel cut oats
  • 4 cups water

Spray your slow cooker liberally with non-stick spray. Cover the bottom with diced apples. Layer the brown sugar and cinnamon on top. Place the steel cut oats on top and then cover with 4 cups of water. Do not stir it. Cook in your slow cooker on low for 8-9 hours. Stir and enjoy!

Both of my kids love it as is, but I add a little milk and sometimes an extra dash of brown sugar. Super easy but warm and done when you wake up! Perfect for a chilly morning.
